Anzac Biscuits (Traditional Australian cookies)


Anzac Biscuits are traditional Australian cookies which first appeared during war times. They take their name from the Australian and New Zealand Army Corps (A.N.Z.A.C.), whose troops landed at Gallipoli in 1915.

At this time, many ingredients used in home baking were difficult to obtain due to food rationing. Anzac Biscuits also travelled well as gifts to loved ones on the battlefields.

Ingredients:

  • 2 cups rolled oats
  • 3/4 cup self-raising flour
  • 1 cup raw sugar
  • 1 tablespoon golden syrup
  • 120 g butter or margarine
  • 2 tablespoons boiling water
  • 1 teaspoon bicarbonate of soda

Method:

1. Grease baking trays and set aside. Preheat oven.

2. Mix all dry ingredients together (except bicarbonate of soda).

3. Melt butter and golden syrup together in a saucepan.

4. Dissolve bicarbonate of soda with boiling water. (It fizzes!)

5. Add to saucepan while still fizzing.

6. Pour this mixture into the dry ingredients and mix thoroughly.
If the mixture is too stiff add a little more water.

7. Put teaspoonsful of mixture onto trays. Place well apart to allow for spreading.

8. Bake for 10 minutes in a moderate oven (about 180 degrees).
Check and leave to bake longer if necessary. (They shouldn't need more than 20 minutes.)

9. Allow biscuits to cool.
